Recipe: Sourdough Banana Bread
This couldn’t be more simple and so delish!
Makes 4 mini loaves or 2 large loaves
Ingredients:
4 large ripe bananas, mashed
1/4 c soft butter
1/8 c coconut sugar
1/2 cup plain greek yogurt (I use Fage 2%)
2 eggs (or 1 egg and 3 tbsp egg whites)
1 c sourdough starter discard
1/4 c finely ground almond flour
1 1/4 c flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
2 tsp vanilla
*50g of nuts, chopped (pecans or walnuts are a fav)
Topping:
25-30g of brown sugar
1-2 tbsp of cinnamon
*Optional: nuts
Instructions:
In a mixer, cream the butter and coconut sugar together, then add mashed bananas, eggs, yogurt, and vanilla. Beat until combined. Remove from mixer and add sourdough discard, and mix with a spoon until incorporated. Then add in the flours, baking powder baking soda, and salt. Mix well.
Allow the batter to rest at room temperature for 4-6 hours, covered. Before baking mix in nuts.
Preheat oven to 350F and use parchment paper to line loaf pans. Topping: Mix brown sugar and cinnamon together and sprinkle on each loaf.
If making mini loaves, bake for 20-30 minutes or until toothpick comes out clean. If making large loaves, bake for 40 minutes and check every 3 min until done in the middle.
