Simple yet delicious. That is my motto. Most of my food is cooked separately so that I can easily grab it from the fridge and use it for multiple meals, depending on what I feel like and how much is leftover, so I make a lot of “Bowl Meals”.

Makes 4 servings

Ingredients:

1 lb of ground beef, I often buy extra lean 93/7

1 cup of dry uncooked jasmine rice

2 cups of frozen peas

4 tbsp of Coconut Aminos

1-2 tbsp All purpose Umami seasoning

*Optional for added veggies/or if you want a low carb option: replace jasmine rice with frozen riced cauliflower.

Additional Toppings/Add-ins: mini sliced cucumbers, microgreens, chopped cilantro, spicy mayo, chopped cashews

Instructions:

Cook ground beef and drain (if using a fattier beef), add in Unami seasoning and 3 tbsp of Coconut Aminos. Cook rice as directed (can cook in beef bone broth for added protein and flavor). Boil frozen peas and drain. Dice up cilantro and slice cucumbers.

Scoop rice into bowl, top with ground beef and peas. Season with more coconut aminos, if desired. Top with slice cucumbers, microgreens, and chopped cilantro. Drizzle spicy mayo and sprinkle cashews on top. Enjoy!
